The present Cava Varias cellars were founded in 1918 in the town of Sant Sadurni d”Anoia in the Alt Penedes region, known as the birthplace of Cava D.O. At this winery, there are over 100 years of cava production history, with immeasurable experience, know-how and passion. The philosophy here is to be in tune with nature, the land, the fruit it yields, and to work in harmony with nature, to understand and bring together all that it offers towards the evolution and pursuit of perfection of the final product.

It’s a process of learning and living with what nature provides in order to produce Cava at the optimum time, with all the components in place for a great experience. Having produced Cava for over 100 years has provided knowledge and experience. The addition of modern technology and innovation allows for the evolution of traditional methods to reach new heights in the production of Cava. The dedication and attention to detail is the strength of what defines Cava Varias and allow it to progress well into the future.

The Winery

Situated in PENEDÈS, Spain

The Cava Varias’ facility is a state-of-the-art, modernist style winery designed by well-known architect Cèsar Martinell, a disciple of world-famous architect Antoni Gaudi. The cellars are situated in the historic centre of Sant Sadurni d”Anoia. The winery is committed to radical changes, while maintaining traditional values and wisdom, by introducing innovation and technology in the winemaking process. The 100-year-old, historical cellars house the ageing bottles and wine casks made of French and American oak for the ageing of wines. The vineyards are planted with the main varieties for the production of Cava, as well as Garnacha and international varieties. 

 
 
 

The People

The winery was founded by the Miro family in 1918 and remained in the family till 2003 when new owners, the Varias Fernandez family, took over the cellars. Pere Varias, who has been involved in the production of Cava in the historic town since 1968, brought his knowledge and experience to the family business. Today, his legacy is passed on to his children, Pere, Jordi and Xavier, who have a love of Cava and for the Penedes region. This new generation Varias’ passion and commitment is evident in their pursuit of excellence in the production of the winery’s wines.
